Somehow Gabe always winds up looking at the souls of your chicks who don't wanna be looked at. :P

That being said! The soul-gazing really is a passive thing, so Anthy won't know that he can see it unless he (or someone else) divulges it. Which could take a while, because Gabe is subtle. (Lucifer probably isn't, though.) Is that okay, or would you rather Gabriel be unable to see things from the outset?

... Also, I am now envisioning a 'just desserts' war.
